For now, enjoy the meal below for breakfast tomorrow. Wheat and gluten free, loaded with protein, iron, calcium, vitamins, folic acid, antioxidants and phytonutrients. Easy to make and the whole family will enjoy! Yum!


 Begin by shredding a small plate of Cabot cheddar cheese. Next, whip up your eggs with raw cow's milk and organic spinach (soaked, rinsed and cut into pieces). Set that aside, cut up your kiwi and slice your avocado and place it on your plate. Saute onions in ghee. Once they are translucent, and I like mine a little browned, add the egg batter. Scramble your eggs, add your cheese, and once cooked, make your beautiful plate. My son loves his eggs with Annie's organic ketchup, free from high fructose corn syrup. Eating this breakfast will keep you full and smiling for hours! Remember to recycle your egg cartons (they also make great paint pallets for kids) and compost your shells and fruit skins - happy environment :)
